How it is measured
L-malic acid concentration accumulated in the fermentation broth by an engineered yeast or filamentous fungal production strain, quantified from the culture supernatant by HPLC or equivalent organic-acid assay, in grams per litre at the end of the run. Carbon source and culture scale (shake flask, bioreactor volume, fed-batch) are recorded with each finding.
